Dodol
     Dodal is sweet halwa made with a mixture of rice flour, coconut milk, and jaggery/palm jaggery. It is a renowned a very famous Srilankan sweet and dodol is also made in Goa during Christmas time. In Kerala, it is called Black Halwa by the Kerala locals. 
   In Kerala, it is made with palm jaggery. by adding some ghee. We can utilize locally acquired rice flour. 
          Really in Srilanka, they use red rice flour to make dodol. They use to eliminate the oil and the halwa must be thick. The more we continue to blend in low hotness the shade of the halwa changes from delightful brown to a dim colored tone.
1. rice flour           100 gm
2. Sugar                 50 Gm
3. Palm 
Jaggery    50 Gm
4. Coconut             2 No.
5. Salt                   A Pinch 
6. Cashewnuts      50 gm
Pre- preparation:
1. Extract coconut milk from the coconut ( grate the coconut and then with a help of a cloth extract all the coconut milk from it)
2. additionally chop cashew nuts & jaggery 
Preparation:
 1. take a pan and Sieve the rice flour. after a minute add to the 
coconut milk. and Stir it well to avoid any lumps. 
 2. Place our dodol mixture on a slow fire and stir 
continuously in a deep pan. After the 
mixture thickens slightly, add the 
chopped jaggery and stir it well. 
 3. wait about 5 minutes, and add the 
chopped nuts. Keep on stirring till 
the whole mixture is well thickened 
and begins to leave the sides of the 
vessel. 
 4. Pour into a dish. Leave to 
cool down. and then cut into a diamond shape and serve.
