SEMIYA (SAFFRON KHEER)
Seviyan kheer also called vermicelli kheer
This semiyan kheer is a North Indian sweet made with wheat vermicelli, milk, sugar, and dry leafy foods with flavors.
About This Seviyan Kheer
The Hindi word Seviyan implies vermicelli in the English language and is called Semiya in South India. Kheer is a pudding-like dish made with milk yet not quite so thick as the western puddings and has a streaming consistency.
The North Indian form varies from the South Indian adaptation of Semiya Payasam here and there. For example, the dry organic products are generally broiled in ghee and this adds an alternate element of flavor to the payasam.
Additionally, the South Indian forms of payasam are some of the time made with coconut milk and rice vermicelli. The arrangement technique is additionally unique.
ingredients;
1. Vermicelli 200 Gm
2. Milk 500 Ml
3. Condensed
Milk 35-40 Ml
4. Sugar 120 Gm
5. Cardamom
powder 3-4 Gm
6. Ghee 30 Gm
7. Cashew nuts 30 Gm
8.
Raisins 30 Gm
9. saffron 2 no
Preparation:
1. to prepare our semiya kheer first heat 10 gm of pure ghee and then fry raisins and
cashews till brown, once done then keep it aside.
2. Fry the vermicelli AKA semiya (very thin rice
noodles) in the remaining ghee till our vermicelli turns golden brown.
3. Add boiled milk. when our semiya turn golden brown keep on stirring
occasionally.
4. Once the vermicelli AKA semiya becomes soft, then add
the condensed milk or sugar as you needed, (require as your taste)
5. Let it simmer for a bit. Once it's thickened add some cardamom powder and stir it well.
Garnish with fried cashew nuts and raisins.
